Stacked Apple Salad with Vegan Goat Cheese

I'm a huge fan of apples and since I cannot have real cheese now that I am a vegan I like making vegan cheese. Salads are a nice way to get some good fruits or veggies down. I typically eat salads for lunch or snack and this is one of my absolute favorites. 23128-stackedsalad-1   What You'll Need For The Salad: 1 large Granny Smith Apple 1 large handful of fresh arugula or mixed greens 2-3 tbsp chopped hazelnuts What You'll Need For The Vegan Goat Cheese: 1 cup macadamia nuts, soaked 8-10 hours 1 tbsp unpasteurized white miso 2-3 tbsp water, as needed Pinch of Himalyan sea salt 2 tsp lemon juice 2 drops lemon essential oil What You'll Need For The Sweet Apple Cider Vinaigrette 2-3 tbsp raw agave 2 tbsp Braggs apple cider vinegar Juice of 1/2 lemon 2 drops lemon essential oil 1 drop cinnamon essential oil 1/4 cup + 2 tbsp cold pressed olive oil Himalayan sea salt Freshly ground pepper   What To Do To Prepare: Slice the apple lengthwise and set aside. In a food processor combine all ingredients for 'vegan goat cheese' until smooth then transfer to a cheesecloth and warp into a small log. Allow the cheese to sit for up to 36 hrs before using. Leave out at room temperature. Once you remove it from the cheese cloth create better flavor by adding lemon juice and salt and lemon essential oil. When the cheese is ready spread it over the apples after you have tossed the apples and arugula in the apple cider vinaigrette. Assemble and top with hazelnuts. Serve and enjoy.
