Mexican Vegan Pizza

I love Mexican food.  The flavors, the spices, and fresh vegetable.  SO delicious.

But sometimes when you go out to eat Mexican food, it ain't so healthy, right?  Well guess, what?  I've got a recipe that you will love AND that is rock-star healthy.  :-)
Here is my favorite recipe for Vegan, Mexican pizza!

Ingredients for the Corn Tortillas:
6-8 ears of corn (or a bag of frozen corn)
1/4 white onion diced
1 drop Oregano essential oil
1 tsp cumin
Himalayan sea salt and black pepper to taste
Directions for corn tortillas: 
Place all ingredients in food processor.  Spread evenly on dehydrator sheet and dehydrate for 10-12 hours
(If you do not have a dehydrator and would like to use pre-made corn tortillas, harden the shells by frying with coconut oil and set aside
Ingredients for Pizza Topping:
1 can of Black Beans
4 Roasted Red Peppers
1 Avocado
1 Small Red Onion
1 Small Bunch of Cilantro
2 Spears of Romaine
5 drops Lime essential oil
3 drops of Lemon essential oil
Directions for Pizza Topping:
Smash the black beans into a thick paste, make sure to salt the beans with sea salt. Spread the roasted red peppers over the beans. Chop avocado, cilantro and red onion into small bits and spread sprinkle essential oils over the top, toss and put on top of the pizzas. Add raw cheese on top last.
Ingredients for Raw "Cheese"
1 cup cashews
1/4 cup nutritional yeast
1/4 - (you may need to add a little more after processing if too thick)
1 drop of Basil essential oil
1 drop of Oregano essential oil
Himalayan sea salt to taste
Directions for Raw Cheese:
Place ingredients in food processor and process until desired texture.
