Fresh Spring Rolls

I love Asian Food.

Love it.

Whether I want a snack or need to prepare an appetizer, I think spring rolls are the perfect, fresh choice.  I get lots of healthy veggies wrapped up in yummy peanut sauce that keeps my guests (and me!) coming back for more.

IMG_9563What You Need For The Rolls

1 cup cooked vermicelli (rice noodles) 5-8 rice paper sheets 1 carrot (sliced thinly) 1 avocado (sliced thinly) 1/3 cucumber (sliced thinly) 1 red bell pepper (sliced thinly) 1/2 cup fresh mint 1/2 cup fresh basil 1 drop of Basil essential oil   What You Need For The Peanut sauce: 2 garlic cloves, minced 1 TBSP ginger, peeled and finely chopped 2 TBSP each of tamari 2 TBS Braggs Amino acid 1 TBS of agave or your favorite sweetener 1 tsp fresh squeezed lime 3 drops lime essential oil 3 drops cilantro oil 1/3 cup organic peanut butter 1/3 cup water (more or less as needed)   What You Need To Do For The Peanut Sauce Blend all the ingredients until smooth.   What You Need To Do For The Wraps: Place rice paper sheets in warm water until soft enough to roll (do this one at a time), then place sliced veggies and noodles in the middle. Fold in half then fold the bottoms inside and roll. Think mini burrito. Keep cool until you are ready to serve, then dip into sauce and enjoy.
