Addictive Vanilla Cherry Macaroons

You might not know this about me, but I have an affliction for raw macaroons. I'm super healthy, eating mostly raw, but nothing satisfies my craving from something sweet like macaroons. Here is one of the most AH-MAZING macaroon recipes for all you macaroon lovers out there. Raw-Macaroons_2                                     Vanilla Cherry Macaroons Ingredients: 2 cups fine finely shredded coconut 1 cup fine white almond meal, plus 1 tsp almond paste ¼ cup 100% pure maple syrup or stevia 1 tablespoon coconut oil ½ cup pitted black cherries, chopped (I prefer fresh, seasonal Bing or Rainier Cherries, but you can use frozen as well) 1 tablespoons lemon juice, plus 7 drops of doTERRA lemon essential oil 3 drops doTERRA wild orange Zest of one lemon 2 teaspoon vanilla bean paste Pinch of Himalayan sea salt *Please reserve extra coconut and lemon zest to roll balls in. Instructions 1. Chop cherries as finely as possible 2. Combine everything in a food processor till well incorporated 3. Make balls using a 1 tablespoon mixture per ball 4.
