Raw Almond, Pesto and Zucchini Pasta

Before I became vegan pasta was the staple of my diet. Now that I no longer eat gluten, I make most of my pasta dishes out of zucchini. Zucchini is SO good for you and it is delicious when shaved and tossed with olive oil and pesto.

  Ingredients: For Pasta: 2 Zucchini shaved long 4-5 large Sun Dried Tomatoes 6 Artichoke Hearts 10 Raw Almonds Bunch of Basil (Optional: Fresh corn, peppers, mushrooms or carrots) Shave the zucchini and then put the remaining ingredients in your food processor. Pasta Sauce: 2 cloves garlic 1/2 cup olive oil 2 tsp of lemon juice 3-4 drops of Lemon essential oil 2 drops of Basil essential oil 2 drops of Thyme essential oil Himalayan Sea Salt Cracked Pepper Stir Directions: Once dressing is mixed toss all ingredients together and assemble to your liking on a plate.
