Decadent Vegan Pancakes

My kids are IN LOVE with pancakes and in our gluten-free home, I had to come up with a great recipe. Here is one I know you will love too. Once you make it you won't get enough. 6857066366_fdb66544fd_zIngredients: 2 cups gluten-free flour 2 1/4 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 2 tbsp chia seeds mixed w/ 6 oz. water and set aside 2 cups almond milk mixed with 2 tbsp distilled white vinegar and set aside for later 1/4 cup melted coconut oil, plus more for pan 1/4 cup liquid sweetener (honey, agave, maple syrup) 1 tbsp vanilla extract   Add 6 oz of water to a liquid measuring glass, then whisk in 2 tbsp of the chia seeds. Set it aside. Once set aside, all of the water won’t be absorbed into the chia seeds (the chia seeds that absorbed water will form a gel.) Don’t worry about the excess water, just dump it out after the chia seeds have set for at least 5 minutes and formed a gel. Directions: 1. In a large bowl sift together flour, baking soda, powder, and salt. (Sifting is crucial! It’s what makes these light and fluffy!) Then add in the almond milk mixture, chia gel (with the excess water discarded), melted oil, sweetener, and vanilla. Mix together, but careful not to over mix because it will make your pancakes flat and tough. Pour coconut oil into a pan and pour pancakes from a liquid measuring glass so you can control the shape of the mixture. Enjoy! I've shared a delicious recipe with you that I know both you and your kids will love too. I'd love to hear from you what you thought about it. Please post a comment in the box below. If you like this recipe, share it with your friends. Post it on their FB walls, Pin it to Pinterest or Tweet it. XO, Hayley Photo credit: Diva Dish
